No Bake Peanut Butter Energy Bites

Ingredients:
  • 1 cup dry oatmeal
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1 tsp. vanilla 
Directions:

Mix all the ingredients in a large bowl and refrigerate for 30 minutes. Then, form into balls whatever size you like. The recipe calls for 2/3 cup toasted coconut flakes, so feel free to add that. Things to add but not limited to are; dried cranberries, almonds, agave nectar, other dried fruit or seeds. Keep them sealed tightly in a container in the fridge and take them out as needed! 

Life's A Beach Mom Notes: I added into my recipe chia seeds. I personally don't like coconut flakes so I didn't put those in. For the chocolate chips I would recommend getting dark chocolate. If you get 70% cacao or higher those are best and they have great benefits. I also used a no salt added, sugar free peanut butter by Teddie. A healthier peanut butter that doesn't sacrifice the taste! If there is something you want to add in or take out, feel free to play with the recipe if you are comfortable with that. I absolutely LOVED these and next time I will definitely double the batch. Thanks to my friend Lindsey for passing this recipe along to me. Hope everyone else enjoys them as much as I do!!!
